Quick Pasta

Ingredients

• 2 chorizo sausages
• ½ brown onion chopped
• ½ red capsicum chopped
• 3 good handfuls baby spinach
• Punnet cherry tomatoes sliced
• ½ packet of linguine or flavoured pasta
• Grated Parmesan or Romano cheese

Method

• Step 1While water is starting to boil for pasta, slice chorizo.
• Step 2Add a small amount of oil to frying pan.
• Step 3Add sausage, onion and capsicum - cooked until brown.
• Step 4Pasta should be cooked by now so drain but retain a little of the water in the pasta.
• Step 5Add pasta to sausage mix.
• Step 6Add spinach, tomatoes and grated cheese.
• Step 7Stir in and serve straight away.
