Mountain Man Brekky

Ingredients

• 500 grams diced bacon
• 500 grams sausage meat
• 1 x white onion
• 1 x red capsicum
• 3 x Jalapeño (optional)
• 10 x eggs
• 1kg hash browns or 10 x red potatoes
• 1 x table spoon butter
• 9qt camp oven
• Salt & Pepper or bbq spice
• 500 grams created mixed cheese

Method

• Step 1Heat camp oven and put in butter
• Step 2Add bacon and brown
• Step 3Remove bacon and leave in bacon oil
• Step 4Add sausage meat and brown
• Step 5Add onions, capsicum and jalapeños and soften
• Step 6Add hash browns, spice and let cook for around 6 minutes
• Step 7Whisk 5 eggs then add to camp oven
• Step 8Add back bacon then cover with cheese
• Step 9Close camp oven, add coals to the lid and allow to simmer for 45 mins
• Step 10Crack 6 x eggs on top of cheese, replace lid with coals in and cook until egg whites are done.
• Step 11It’s ready.
