Roasted Pickled Pork with Parsley Sauce


  • one piece of pickled pork about 1.5 kg.
  • 2 cup brown sugar
  • 1/3 cup maple syrup
  • 1/3 cup honey
  • 1 tablespoon Dijon mustard
  • whole cloves
  • 50 g butter
  • 50 g plain flour
  • 600 ml semi-skimmed milk
  • 2-3 heaped tablespoons chopped fresh parsley
  • salt and ground black pepper


  • Step 1Roasted Pickled Pork
  • Step 2Stir sugar, maple syrup, honey and mustard in a pan over low heat till sugar is dissolved.
  • Step 3Stud the pork with cloves and baste with 1/2 the honey mix.
  • Step 4Place in oven tray and cook for about 11/2 hrs. at 170 deg. till cooked. Basting every 1/2 hr.
  • Step 5I roasted the veg in another camp oven on top of the meat camp oven at the same time.
  • Step 6Parsley Sauce
  • Step 7Melt the butter in a small pan and stir in the flour. Cook, stirring continuously, for 1 minute, until the mixture forms a smooth ball.
  • Step 8Remove the pan from the heat and gradually pour in the milk, stirring or whisking constantly. Return the pan to the heat and bring to the boil, still stirring or whisking.
  • Step 9Reduce the heat and simmer the sauce gently for 2 minutes, stirring occasionally, until it is smooth and thick. Stir in fresh parsley and season to taste with salt and pepper.
