Description

When you're camping, you need a little ingenuity so this is a great way to make cakes in your camp oven when you can't have an open fire. This is hardly a recipe as it uses a packet cake mix but the trick is in how its cooked.

Ingredients

1 pkt banana bread mix
extra ingredients as per box instructions (usually water, egg, oil)

Method

Step 1Prepare banana bread according to instructions
Step 2Place into lightly greased cake pan that fits inside your camp oven
Step 3Place a trivet inside your camp over and place cake pan on top. (this ensure your cake pan doesn't touch the base of the camp oven)
Step 4Place enough water inside the camp oven so that it covers the trivet and just touches the base of the cake pan
Step 5Cover the top of the cake pan with foil to create a seal and stop steam wetting your mixture as it cooks
Step 6Put the lid on your camp oven.
Step 7Turn on your gas cooker to the lowest setting
Step 8Cook for the time indicated on the packet mix
