Description

Fresh hard vegetables store well outside the fridge so are great for camping and provide you with healthy ingredients for salads. Try this fresh and crunchy beetroot and carrot salad.

Ingredients

  • 1 whole raw beetroot
  • 2 fresh raw carrots
  • handful of currants
  • salt & pepper to taste

Method

  • Step 1Peel & grate the beetroot (use disposable latex gloves to keep your hands from getting stained)
  • Step 2Peel & grate the carrots
  • Step 3toss lightly together and add the seasoning and currants
