Description

Many modern salads don't require lettuce and what's better than a main course salad for ease on the road. With a bit of creativity you'll find salads aren't impossible when camping and are a much desired luxury. We made this one in the middle of the Gibson Desert.

Ingredients

  • 1 chorizo sausage
  • 1 green capsicum
  • 2 tablespoons sliced black olives (from a jar)
  • half block of feta cheese
  • 1 Lebanese cucumber
  • 1 small avocado
  • finely sliced red onion
  • Salad dressing

Method

  • Step 1Finely slice or dice all ingredients and toss together in a bowl
  • Step 2Add a splash of dressing if you like, although the flavours are sufficient on their own and the bottled olives add enough moisture.
