Description

This recipe is a twist on your typical fresh salsa for when you've been on the road a while and fresh produce is limited. Salsa is ideal to add interest and flavour to any steak, chops or just as a side dish.

Ingredients

1 sml tin corn kernels
1 sml tin chopped capsicum
1 sml tin chick peas
1/2 sml tin crushed pineapple
Dash lime juice (fresh or bottled)
Sugar to taste (1-2 tspns)
Optional: diced fresh vegies if available such as avocado, cherry tomatoes, red onion.

Method

Step 11. Drain liquid from tin ingredients
Step 22. Finely dice any fresh ingredients
Step 33. Combine all prepared ingredients in a bowl and mix gently to combine sugar and juice. Adjust to taste.
Step 4Can be stored in an airtight container in fridge for a couple of days.
